Fresh Dairy Products
Our fresh products may include some aging, but are ready to eat within 60 days of milking. Products are listed in alphabetical order. Please check back for pictures as we are updating that part of our website through 2017. We do not offer the same products all of the time, but it fluctuates through the year. If there is a specific product you are interested in purchasing, please contact us to see if we can make it a priority. After all, we do want to make what the customer wants!
Caramels - We make chewy salted and not salted goat milk caramels. If you've never tried these before, they are not "goaty" in flavor, but buttery addictive goodness. We also have some soft salted or not salted caramels if you don't like the firmer stickier caramels. We also offer flavored caramels with nuts or other goodies added.
Chevre ("shev" or "shev-ruh") Originally from France, these soft goat cheeses are creamy, tart, with an earthy flavor - some people describe as "goaty." The "goaty" flavor of our chevre is mild. We sell these plain, rolled in herbs, or otherwise seasoned. All fresh chevre we offer is from raw unpasteurized goat milk.
Feta - This Greek cheese is known for being full-flavored, tangy, and salty. The traditional variety made from pure sheep milk or 70% sheep milk and 30% goat milk. Ours is usually made with 60-70% sheep milk with the balance in goat milk. Greek feta is aged up to a year (one month is very common), but most of our is sold younger - as young as five days brining. It is milder, but still tangy. Greeks value the tangier and more crumbly cheese (aged longer) as the better cheese. Our marinated feta does not require refrigeration if the oil covers the cheese. The oil is also very good drizzled on salad, pizza crust, bread, meat, and vegetables. We also offer plain crumbled and sometimes slabs of feta (good for grilling or broiling).
Mozzarella - This Italian mild, soft, pulled cheese is popular on pizza and in other Italian dishes. Look for our variations of marinated mozzarella ideally just made the day before (because we're not staying up all night making it). Be ready to eat it really fresh though it keeps well for 5-7 days, and freezes well if grated first. We offer this from raw unpasteurized cow milk.
Yogurt - We have regular yogurt, which is usually thinner than what you find in the store because we do not add thickeners. If you like thicker yogurt, strain it through butter muslin until desired thickness and use the whey that comes of in place of water in recipes, such as pancakes or bread. We offer this from raw unpasteurized sheep milk.
