July 8th we will bring a freezer filled with these delicious items:
- Beef: grass-fed Lowline angus beef (no grain, no hormones, no antibiotics) from a two year old steer. Steaks, roasts, ground beef, and stew meat. Steaks are small - this was a miniature-sized steer. Paper wrapped & USDA inspected with a few samples vacuumed packed so you can see examples of the meat. See the price sheet above to get an idea of our pricing.
- Gelato: raw unpasteurized sheep or goat milk gelato sold in single serve (6 fluid ounce) containers. Gelato is often described as Italy's equivalent of ice cream, but it is lower in fat, more intense in flavor, and should be served softer than ice cream (just a little stiffer than soft serve). Flavors in the freezer for market include:
- Sheep milk - Hazelnut, Belgian chocolate, chocolate orange (chocolate with candied orange and orange syrup), lemon yogurt, and strawberry margarita, strawberry-orange, vanilla mint chocolate chip, orange cream;
- Goat milk - coconut lime, coconut candy bar (coconut gelato with chocolate flecks and almonds).
- Goat milk caramels: delicious chewy (not "goaty") caramels are addictive delicious buttery caramel. We have regular caramels (one dozen per bag) or turtle caramels with a little pecan and dark chocolate still in caramel cubes (eight per bag). These do not require refrigeration, but it does extend their shelf life. We have several types: soft caramels salted or not, chewy caramels salted or not, and chewy caramels with cashews.
- Feta: marinated sheep-goat milk feta (about 60% sheep/40% goat). We will have a little plain feta and plenty of feta in an herb oil or a garlic marinade.
- Chevre: this tangy creamy goat cheese comes in little 1/2 cup logs seasoned garlic and chives, tomato oregano, or cranberry orange.
- Sheep Milk Yogurt: plain unsweented sheep milk yogurt is thinner than what you find in the store as we do not add thickeners or powdered cow milk. It is creamy, rich, and delicious, great with some fruit or granola. We also have some simple syrups you can mix in flavored orange or lime. If you like thicker yogurt, feel free to strain for a few hours or overnight. (The nutritious whey is a shame to loose, but great to replace water in baking recipes such as bread or even in pancakes.)
Wednesdays 4pm - 7pm (May - September) Sherman Ave & Fifth St in Coeur d'Alene

Steaks are small - this was a miniature-sized steer. Paper wrapped & USDA inspected with a few samples vacuumed packed so you can see examples of the meat. Available two steaks per package, one pound ground beef ($5.50 includes tax), single roasts.
- Goat milk: I will bring a limited amount of raw unpasteurized goat milk. It has sold out previously (not always), so it is first come first serve. From this morning milking, the milk is bottled in glass and has a very milk fresh flavor.

- Feta: marinated sheep-goat milk feta (about 60% sheep/40% goat). It is not a biting as regular feta and is bathed in a delicious herb oil so it requires no refrigeration as long as the cheese stays submerged. The oil is what we use as a bread dip (with a little balsamic vinegar), salad dressing, brushed on meats to roast or grill, or drizzled over veggies for roasting.
